Vegan Richa Mac and Cheese is a creamy plant-based pasta dish with a rich, velvety cashew-based sauce and savory cheesy flavor from nutritional yeast. It’s a comforting dairy-free meal that is quick to prepare and perfect for weeknight dinners.

Ingredients

  • 8 oz elbow macaroni or pasta of choice
  • 3/4 cup raw cashews, soaked
  • 1/4 cup nutritional yeast
  • 1 cup unsweetened plant-based milk
  • 2 cloves garlic
  • 1 teaspoon onion powder
  • 1/4 teaspoon turmeric
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package instructions in a pot of salted boiling water.
  2. Drain the pasta and set aside.
  3. In a blender, combine soaked cashews, plant-based milk, nutritional yeast, garlic, onion powder, turmeric, dijon mustard, lemon juice, olive oil, salt, and black pepper.
  4. Blend until the mixture becomes completely smooth and creamy.
  5. Pour the sauce into a saucepan and heat over medium heat, stirring frequently until it thickens slightly.
  6. Add the cooked pasta to the saucepan.
  7. Stir until the pasta is evenly coated with the creamy sauce.
  8. Taste and adjust seasoning if needed.
  9. Serve warm.

  • Soak cashews in hot water for 15–20 minutes for a smoother sauce.
  • Add steamed broccoli or peas for extra vegetables.
