Ingredients

8 oz of noodles (spaghetti or any noodle of your choice)

3 tbsp olive oil

6 garlic cloves, minced

2 tbsp soy sauce or tamari (for a gluten-free option)

1 tbsp sesame oil

1 tbsp rice vinegar

1 tbsp maple syrup or agave syrup

1 tsp red pepper flakes (optional for a little spice)

2 tbsp chopped green onions (optional, for garnish)

1 tbsp toasted sesame seeds (optional, for garnish)

Instructions

  1. Cook the noodles according to the package instructions. Drain and set aside.

  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, making sure not to burn the garlic.

  3. Add the soy sauce, sesame oil, rice vinegar, maple syrup, and red pepper flakes to the pan. Stir well and let the sauce simmer for 2-3 minutes.

  4. Add the cooked noodles to the pan, tossing them in the sauce until evenly coated.

  5. Serve the noodles warm, garnished with green onions and sesame seeds if desired.

Notes

  • You can customize this recipe by adding sautéed vegetables like spinach, bell peppers, or mushrooms for extra flavor and texture.

  • For added protein, consider including tofu, tempeh, or vegan chicken.

  • To make it gluten-free, swap the noodles for gluten-free pasta and use tamari in place of soy sauce.
