Vegan Fall Harvest Pizza with Delicata Squash and Basil is a seasonal delight that brings together the sweet, tender flavors of roasted delicata squash with fresh basil and a crispy pizza crust. This plant-based pizza is perfect for embracing autumn’s bounty in a delicious, colorful, and comforting meal.

Ingredients

  1. 1 delicata squash, halved, seeded, and sliced into thin half-moons
    1 pre-made vegan pizza crust or homemade crust
    1 cup tomato sauce or pizza sauce
    1 cup vegan mozzarella or cashew cheese, shredded or dolloped
    2 tablespoons olive oil
    3 cloves garlic, minced
    1 teaspoon dried oregano
    Salt and freshly ground black pepper, to taste
    1/4 cup fresh basil leaves, torn
    Optional: red pepper flakes for heat

Instructions

Preheat oven to 425°F (220°C).

  1. Toss sliced delicata squash with 1 tablespoon olive oil, garlic, oregano, salt, and pepper.
  2. Spread squash on a baking sheet and roast for 15-20 minutes until tender and lightly caramelized.
  3. Roll out or place pizza crust on a baking sheet or pizza stone.
  4. Spread tomato sauce evenly over the crust.
  5. Arrange roasted delicata squash slices on top of the sauce.
  6. Add vegan cheese evenly over the pizza.
  7. Bake for 12-15 minutes until the crust is golden and cheese is melted.
  8. Remove from oven and scatter fresh basil leaves over the pizza.
  9. Optional: sprinkle with red pepper flakes.
  10. Slice and serve warm.

  2. Use fresh thyme or rosemary instead of oregano.
