Vegan Curry Dressing is a creamy, spiced, and versatile sauce made with curry powder, plant-based yogurt or tahini, lemon juice, and a touch of sweetness. Perfect for salads, bowls, wraps, and roasted veggies, it’s a quick and flavorful way to elevate any meal.

Ingredients

  1. 1/2 cup plant-based yogurt or tahini
  2. 2 tbsp olive oil or avocado oil
  3. 2 tbsp fresh lemon juice or apple cider vinegar
  4. 1 tbsp maple syrup or agave nectar
  5. 2 tsp curry powder
  6. 1/2 tsp garlic powder (or 1 clove fresh minced garlic)
  7. 1/4 tsp ground turmeric (optional, for color)
  8. 1/4 tsp salt
  9. 23 tbsp water (to thin, as needed)

Instructions

In a small bowl or jar, whisk together plant-based yogurt or tahini, lemon juice (or vinegar), and maple syrup until smooth.

  1. Add curry powder, garlic powder or fresh garlic, turmeric (if using), and salt. Mix well.
  2. Slowly whisk in the oil until emulsified and creamy.
  3. Thin with water, one tablespoon at a time, until desired consistency is reached.
  4. Taste and adjust seasonings to preference.
  5. Serve immediately or refrigerate until ready to use.

Notes

  1. Add cayenne pepper or hot sauce for a spicy version.
  2. Substitute tahini with almond or cashew butter for a nutty twist.
  3. Blend in fresh herbs like cilantro or parsley for an herby variation.
  4. Increase lemon juice and add zest for extra tanginess.
  5. Use cashews or vegan mayo for a creamier, richer consistency.
