Ingredients

  • 1 cup carrots, peeled and chopped or grated
  • 1 frozen banana
  • 1 cup unsweetened almond milk (or plant-based milk of choice)
  • 2 Medjool dates (or 1 tbsp maple syrup)
  • 2 tbsp rolled oats (optional, for thickness)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger (optional)
  • 1/2 tsp vanilla extract
  • 1/2 cup ice cubes (optional)
  • 1 tbsp chia seeds or flaxseeds (optional)

Instructions

  1. Add all ingredients to a high-speed blender.
  2. Blend on high until smooth and creamy, scraping sides if needed.
  3. Taste and adjust sweetness or spices to preference.
  4. Pour into a glass and serve immediately, topped with shredded coconut or nuts if desired.
