Vegan buffalo veggies are a spicy, plant-based alternative to buffalo wings made with roasted or air-fried vegetables tossed in tangy buffalo sauce. Perfect as a snack, appetizer, or side dish, they’re crispy, bold, and satisfying.

Ingredients

  1. 1 large head cauliflower, cut into florets (or broccoli, zucchini, Brussels sprouts)
  2. 2 tbsp olive oil or avocado oil
  3. 1 tsp garlic powder
  4. 1 tsp onion powder
  5. Salt and black pepper, to taste
  6. 1/2 cup buffalo hot sauce
  7. 2 tbsp vegan butter, melted

Instructions

Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).

  1. In a large bowl, toss vegetables with oil, garlic powder, onion powder, salt, and pepper.
  2. Spread evenly on a baking sheet or in an air fryer basket.
  3. Roast for 20–25 minutes (or air fry 15–18 minutes), flipping halfway, until crispy and tender.
  4. In a small bowl, whisk together buffalo hot sauce and melted vegan butter.
  5. Toss roasted veggies in buffalo sauce until evenly coated.
  6. Serve immediately with vegan ranch or blue cheese dip.

  • Use different veggies like broccoli, zucchini, or Brussels sprouts.
  • Add cayenne or smoked paprika for extra spice.
  • Toss veggies in cornstarch before roasting for more crispiness.
