Ingredients

For the Beignets:

  • 2½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 teaspoons active dry yeast
  • ½ teaspoon salt
  • 1 cup warm milk (about 110°F)
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon pure vanilla extract
  • Vegetable oil, for frying
  • For Topping:

    • Powdered sugar, for dusting

Instructions

Prepare the Dough:

  • In a large bowl, whisk together flour, sugar, yeast, and salt.
  • In a separate bowl, mix warm milk, melted butter, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms.

2. Knead the Dough:

  • Transfer dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic.

3. First Rise:

  • Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1.5 hours, or until doubled in size.

4. Shape the Beignets:

  • Punch down the dough and roll it out to ¼-inch thickness on a floured surface.
  • Cut into 2×2 inch squares using a sharp knife or pizza cutter.

5. Heat the Oil:

  • Pour 2 inches of vegetable oil into a deep fryer or large pot.
  • Heat oil to 360°F, using a thermometer for accuracy.

6. Fry the Beignets:

  • Fry in batches, avoiding overcrowding.
  • Cook for 1–2 minutes per side until golden brown and puffed.
  • Remove with a slotted spoon and drain on paper towels.

7. Serve:

  • While warm, dust generously with powdered sugar.
  • Enjoy immediately!

Notes

  • Perfect Texture: Knead dough properly and allow it to rise fully for light, airy beignets.
  • Oil Temperature Matters: Maintain 360°F to prevent greasy or undercooked beignets.
  • Storage: Best fresh, but can be stored in an airtight container for 2 days.
  • Reheating: Warm in a 350°F oven for 5 minutes (avoid microwaving).
  • Flavor Variations: Add cinnamon, nutmeg, or citrus zest for a unique twist!
