Vampire Pasta is a spooky and delicious Halloween-inspired dish featuring black spaghetti tossed in a rich, garlicky tomato sauce, often garnished with mozzarella ‘fangs’ and a drizzle of red pepper oil for a dramatic and flavorful presentation.

Ingredients

  • 12 oz black spaghetti or squid ink pasta
  • 2 tbsp olive oil
  • 4 garlic cloves, thinly sliced
  • ½ tsp red chili flakes (optional)
  • 1 can (14 oz) crushed tomatoes or tomato passata
  • 2 tbsp tomato paste
  • Salt and black pepper to taste
  • Fresh basil leaves or parsley, chopped
  • Grated Parmesan cheese (optional)
  • Fresh mozzarella pearls or slices (optional, for garnish)
  • Red pepper oil or balsamic glaze (optional, for drizzle)

Instructions

  1. Bring a large pot of salted water to a boil. Cook black pasta according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced garlic and red chili flakes (if using) and sauté until garlic is golden and fragrant.
  3. Stir in tomato paste and cook for 1–2 minutes to deepen the flavor.
  4. Add crushed tomatoes, season with salt and black pepper, and simmer for 10–15 minutes, stirring occasionally.
  5. Add the cooked pasta to the sauce and toss until fully coated.
  6. Plate the pasta and garnish with mozzarella pearls or slices, chopped herbs, and a drizzle of red pepper oil or balsamic glaze if desired.
  7. Serve hot and enjoy the spooky presentation.

Notes

  • Use black bean pasta or dye regular pasta with food coloring for a vegetarian alternative to squid ink pasta.
