Ingredients

12 oz pasta (penne, fettuccine, or any choice of pasta)

2 tbsp olive oil

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated parmesan cheese

Salt and pepper, to taste

Red pepper flakes (optional for some heat)

Fresh basil or parsley (for garnish)

Instructions

  • Cook the pasta according to the package instructions, then drain and set aside, reserving some pasta water.

  • In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1-2 minutes, or until fragrant.

  • Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts, about 3 minutes.

  • Pour in the heavy cream, and bring the mixture to a simmer. Cook for another 3-5 minutes until the sauce thickens slightly.

  • Add the grated parmesan cheese and stir to combine, making the sauce creamy and smooth. Season with salt and pepper to taste, and add red pepper flakes if desired for a little heat.

  • Toss the cooked pasta into the sauce, making sure it’s well coated. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

  • Garnish with fresh basil or parsley before serving.

Notes

  • Variations: Add grilled chicken for extra protein, or use mushrooms and zucchini for a vegetarian twist. For a vegan version, substitute coconut cream and nutritional yeast.

  • Storage: Leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet or microwave, adding a splash of water or broth as needed.
