12 oz pasta (penne, fettuccine, or any choice of pasta)
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1 cup heavy cream
1/2 cup grated parmesan cheese
Salt and pepper, to taste
Red pepper flakes (optional for some heat)
Fresh basil or parsley (for garnish)
Cook the pasta according to the package instructions, then drain and set aside, reserving some pasta water.
In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1-2 minutes, or until fragrant.
Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts, about 3 minutes.
