Tuscan Mac and Cheese is a creamy, Italian-inspired twist on the classic comfort dish—featuring melted mozzarella and Parmesan cheese, sun-dried tomatoes, spinach, and aromatic herbs for a rich and elegant meal.

Ingredients

  • 12 oz elbow macaroni (or any short pasta like penne or cavatappi)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk or half-and-half
  • 2 cloves garlic, minced
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach leaves
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
  2. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  4. Whisk in flour and cook for 1 minute to form a roux.
  5. Gradually whisk in milk or half-and-half, stirring until the sauce thickens and becomes smooth.
  6. Stir in mozzarella and Parmesan until melted and creamy. Season with salt, black pepper, Italian seasoning, and crushed red pepper flakes if desired.
  7. Add sun-dried tomatoes and spinach to the sauce, stirring until the spinach wilts.
  8. Fold in the cooked pasta and toss until evenly coated.
  9. Transfer to the prepared baking dish and sprinkle with extra cheese if desired.
  10. Bake for 15–20 minutes until bubbly and golden. Let rest for a few minutes before serving.

  • For added protein, mix in grilled chicken, shrimp, or Italian sausage.
  • Use heavy cream for a richer sauce or plant-based milk for a lighter version.
  • Skip baking for a quicker, creamier stovetop version.
