Ingredients

1 1/2 cups cooked turkey, finely chopped or shredded
1/2 cup mayonnaise
1/4 cup celery, finely diced
1/4 cup green onions, chopped
1 tablespoon Dijon mustard
Salt, to taste
Pepper, to taste
White or whole wheat sandwich bread, crusts removed
Butter (optional, for spreading on bread slices)

Instructions

  1. In a medium bowl, combine chopped turkey, celery, and green onions.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, salt, and pepper.
  3. Add the dressing to the turkey mixture and stir until evenly coated.
  4. If desired, lightly butter the bread slices to prevent sogginess.
  5. Spread the turkey salad mixture evenly onto half of the bread slices.
  6. Top with the remaining slices, press gently, and trim the crusts.
  7. Cut each sandwich into quarters or finger-sized rectangles.
  8. Serve immediately or chill until ready to serve.
