Ingredients

For the Stuffing:

1 lb sweet Italian sausage, casings removed

1 cup diced onion

1 cup diced celery

1 cup diced carrots

2 tablespoons fresh sage, chopped

1 tablespoon fresh thyme leaves

10 oz plain stuffing mix

1/2 cup chicken stock

Salt and freshly ground black pepper, to taste

For the Turkey:

1 skin-on, boneless turkey breast (about 34 lbs), butterflied

2 tablespoons Dijon mustard

2 tablespoons melted butter

Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Stuffing:

    • Melt butter in a skillet over medium heat. Add onion, celery, and carrots; cook for 5 minutes.

    • Add sausage and cook until browned. Stir in sage and thyme; cook 1 more minute.

    • In a large bowl, mix sausage mixture with stuffing mix and chicken stock. Season to taste.

  2. Prepare the Turkey:

    • Preheat oven to 375°F (190°C).

    • Pound butterflied turkey to even thickness (about 1/2 inch).

    • Season with salt and pepper, spread Dijon mustard evenly over surface.

    • Spread stuffing over the turkey, leaving a 1/2-inch border.

    • Roll tightly and secure with kitchen twine at 2-inch intervals.

  3. Roast the Roulade:

    • Place roulade seam-side down on a rack in a roasting pan.

    • Brush with melted butter and season. Roast for 1 hour or until internal temp reaches 165°F (74°C).

    • Broil for 2–3 minutes if the skin needs extra browning.

  4. Rest and Slice:

    • Let roulade rest for 15 minutes. Slice into 1/2-inch thick rounds, removing twine as you go. Serve with sides and gravy.

  • Add dried cranberries, apples, or chopped nuts for variety in the stuffing.

  • Use gluten-free stuffing mix for a GF version.
