Ingredients
8 oz sliced turkey breast
1 ripe avocado, sliced
4 slices sandwich bread or 2 ciabatta rolls
1/4 cup mayonnaise
1 tbsp finely chopped chipotle peppers in adobo sauce
2 lettuce leaves
4 tomato slices
1/4 small red onion, thinly sliced
1 tsp lime juice
1 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper
Instructions
In a small bowl, mix the mayonnaise with the finely chopped chipotle peppers in adobo sauce to make chipotle mayo.
Lightly toast the bread or ciabatta rolls if desired.
Spread a generous layer of chipotle mayo on one side of each slice of bread.
Place sliced turkey evenly over the bottom slice of bread.
Add sliced avocado on top of the turkey and drizzle with lime juice.
Layer lettuce, tomato slices, and thinly sliced red onion over the avocado.
Drizzle a small amount of olive oil over the vegetables.
Season with salt and black pepper to taste.
Place the top slice of bread over the fillings and gently press together.
