Turkey and Sweet Potato Skillet is a healthy, one-pan meal made with ground turkey, tender sweet potatoes, and colorful veggies sautéed with warm spices. It’s perfect for quick weeknight dinners or meal prep.

Ingredients

  1. 1 tablespoon olive oil
  2. 1 pound ground turkey
  3. 2 medium sweet potatoes, peeled and diced
  4. 1 red bell pepper, chopped
  5. 1 small onion, chopped
  6. 2 cloves garlic, minced
  7. 1 teaspoon ground cumin
  8. 1 teaspoon smoked paprika
  9. 1/2 teaspoon chili powder (optional)
  10. Salt, to taste
  11. Black pepper, to taste
  12. 2 cups fresh spinach or kale (optional)
  13. Chopped fresh parsley or cilantro, for garnish (optional)

Instructions

Heat olive oil in a large skillet over medium heat.

  1. Add diced sweet potatoes and cook for 8–10 minutes, stirring occasionally, until starting to soften.
  2. Add chopped onion and bell pepper. Sauté for 3–4 minutes until slightly tender.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add ground turkey, breaking it up with a spoon. Cook for 6–8 minutes, until browned and cooked through.
  5. Season with cumin, paprika, chili powder (if using), salt, and pepper. Stir to combine.
  6. If using spinach or kale, stir it in and cook for another 1–2 minutes until wilted.
  7. Taste and adjust seasoning as needed. Garnish with parsley or cilantro and serve warm.

Notes

  1. For faster sweet potato cooking, cover the skillet briefly to trap steam.
  2. Swap turkey with ground chicken, beef, or plant-based meat for variety.
  3. Add cooked beans or corn for extra fiber and texture.
  4. Great for meal prep—reheats well and freezes easily.
