Tuna Cucumber Boats are a light, refreshing, and delicious snack or appetizer that combines the crispness of cucumber with the savory goodness of tuna. This easy-to-make recipe is perfect for a healthy lunch, a picnic, or a quick bite.

Ingredients

  1. 2 large cucumbers
1 can of tuna in water, drained
    2 tbsp mayonnaise
    1 tbsp Dijon mustard
    1/2 tsp garlic powder
    1/4 tsp salt
    1/4 tsp black pepper
1 tbsp chopped fresh parsley (optional)
    1 tbsp lemon juice

Instructions

Slice the cucumbers in half lengthwise and scoop out the seeds using a spoon, creating a boat shape.

  1. In a bowl, mix the drained tuna, mayonnaise, Dijon mustard, garlic powder, salt, pepper, parsley, and lemon juice.
  2. Stir the mixture until everything is well combined.
  3. Spoon the tuna mixture into the hollowed-out cucumber halves, dividing it evenly.
  4. Serve immediately, or chill in the fridge until ready to enjoy.

Notes

  • For a spicy kick, add hot sauce or chopped jalapeños to the tuna mixture.
  • To make it creamy, add mashed avocado to the tuna salad.
  • For a Mediterranean twist, add chopped Kalamata olives and feta cheese.
  • Feel free to add diced celery, red onion, or bell peppers for extra crunch.
  • Use dairy-free mayo or Greek yogurt for a dairy-free option.
  • Best served fresh for a crispy texture.
  • Store the tuna mixture separately from the cucumber if you have leftovers.
