Ingredients
1 pound (450 g) pizza dough
3/4 cup (180 g) ricotta cheese
1 ripe pear, thinly sliced
1 cup (100 g) shredded mozzarella cheese
1 ounce (28 g) black truffle, thinly shaved or finely grated
1 teaspoon truffle oil (optional)
1 tablespoon olive oil
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Instructions
Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
Roll out the pizza dough on a lightly floured surface to your desired thickness.
Transfer the dough to parchment paper or a pizza peel.
Brush the surface lightly with olive oil.
Spread dollops of ricotta evenly over the dough, leaving a small border around the edges.
Sprinkle shredded mozzarella evenly over the top.
Arrange the thin pear slices across the pizza.
Season with salt, black pepper, and fresh thyme leaves.
Carefully transfer the pizza to the hot oven and bake for 10–14 minutes, until the crust is golden and the cheese is bubbling.
Remove from the oven and immediately shave fresh black truffle over the hot pizza, or drizzle lightly with truffle oil if using.
Slice and serve warm.
Notes
Firm pear varieties like Bosc or Anjou hold their shape best during baking.
Add fresh arugula after baking for a peppery contrast.
Sprinkle toasted walnuts for added crunch and texture.
Store leftovers in the refrigerator for up to 3 days and reheat in a 350°F (175°C) oven for best results.
A light drizzle of honey after baking enhances the sweet and savory balance.
