Traditional Beef Stroganoff is a classic comfort dish featuring tender strips of beef cooked in a creamy mushroom sauce with onions, mustard, and savory seasonings. Served over egg noodles, this rich and velvety meal is hearty, flavorful, and perfect for a cozy family dinner.

Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 12 oz egg noodles

Instructions

  1. Cook egg noodles according to package instructions. Drain and set aside.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add sliced beef and sear quickly until browned on the outside. Remove from skillet and set aside.
  4. In the same skillet, add chopped onion and cook until softened.
  5. Stir in minced garlic and cook for about 1 minute until fragrant.
  6. Add sliced mushrooms and cook until they release moisture and become lightly browned.
  7. Sprinkle flour over the mushroom mixture and stir well.
  8. Gradually pour in beef broth while stirring to create a smooth sauce.
  9. Add Dijon mustard, Worcestershire sauce, paprika, salt, and black pepper.
  10. Let the sauce simmer until slightly thickened.
  11. Reduce heat to low and stir in sour cream until the sauce becomes creamy.
  12. Return the cooked beef to the skillet and simmer gently for a few minutes until heated through.
  13. Serve the beef stroganoff over egg noodles.
  14. Garnish with chopped parsley before serving.

Notes

  • Do not boil the sauce after adding sour cream to prevent curdling.
  • For extra flavor, a splash of white wine can be added when pouring in the broth.
  • Rice or mashed potatoes can be used instead of egg noodles.
