Tortellini Salad is a hearty, colorful, and flavor-packed pasta salad made with cheese-filled tortellini, crisp vegetables, and a tangy Italian-style dressing. Perfect for potlucks, picnics, or quick dinners, this easy dish can be served cold or at room temperature for a refreshing yet satisfying meal.

Ingredients

  • 1 lb cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup bell peppers, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup salami or pepperoni, sliced (optional)
  • 1 cup mozzarella balls or cubes
  • 2 tablespoons fresh basil or parsley, chopped

For the Dressing:

  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon honey or sugar (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine cooled tortellini, tomatoes, cucumber, red onion, bell peppers, olives, mozzarella, and salami (if using).
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, Italian seasoning, honey, salt, and pepper.
  4. Pour dressing over the salad and toss until everything is evenly coated.
  5. Top with fresh basil or parsley and refrigerate for at least 30 minutes before serving.

  • Rinse cooked tortellini with cold water and toss with olive oil to prevent sticking.
