A fresh and vibrant summer salad combining sweet peaches, juicy tomatoes, and creamy avocado tossed in a light lemon-honey dressing. Perfect as a refreshing side dish or light lunch.

Ingredients

  • 2 large ripe peaches, sliced
  • 2 cups cherry tomatoes, halved
  • 1 large avocado, diced
  • 1/4 small red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a large bowl, gently combine sliced peaches, cherry tomatoes, diced avocado, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
  3. Drizzle dressing over the salad and toss gently to coat without mashing the avocado.
  4. Sprinkle torn basil over the top just before serving.
  5. Serve immediately for best flavor and texture.
