Tomato Basil Garlic Bread is a fresh and flavorful twist on traditional garlic bread, topped with juicy tomatoes, aromatic garlic, and fresh basil over a crispy, golden loaf. It’s an easy appetizer or side that’s quick to prepare and crowd-pleasing.

Ingredients

  1. 1 baguette or Italian bread, sliced lengthwise
  2. 1 cup fresh tomatoes, diced and lightly drained
  3. ¼ cup fresh basil leaves, chopped
  4. 3 garlic cloves, minced
  5. 4 tbsp unsalted butter, softened
  6. 1 tbsp olive oil
  7. ¼ tsp salt
  8. ¼ tsp black pepper
  9. Optional: ½ cup grated Parmesan or shredded mozzarella cheese

Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  1. In a bowl, mix softened butter with minced garlic, olive oil, and a pinch of salt.
  2. Slice bread lengthwise and spread garlic butter evenly over the cut sides.
  3. Top with diced tomatoes, season with salt and pepper, then sprinkle with chopped basil.
  4. If using cheese, sprinkle it evenly on top.
  5. Place on baking sheet and bake for 10–12 minutes, or until the bread is golden and crisp and cheese is melted.
  6. Let cool slightly, slice, and serve warm.

Notes

  • Drain tomatoes well to prevent soggy bread.
  • Use fresh basil for best flavor, but dried basil can be used in a pinch.
  • Add cheese or balsamic glaze for a richer version.
  • To make ahead, assemble up to 2 hours in advance and bake before serving.
  • Best served warm; avoid microwaving leftovers to maintain crispness.
