Tiramisu Cheesecake is a decadent fusion of two beloved desserts—tiramisu and cheesecake. This treat combines a creamy cheesecake filling with bold coffee-soaked ladyfingers, topped with cocoa powder and chocolate shavings, offering an indulgent dessert experience perfect for special occasions.

Ingredients

  1. For the crust:
  2. 1 1/2 cups graham cracker crumbs
  3. 1/4 cup granulated sugar
  4. 1/2 cup unsalted butter, melted
  5. For the filling:
  6. 16 oz cream cheese, softened
  7. 1 cup granulated sugar
  8. 1 teaspoon vanilla extract
  9. 1 tablespoon espresso powder (or instant coffee)
  10. 3 large eggs
  11. 1 cup mascarpone cheese
  12. 1/2 cup heavy cream
  13. 1 tablespoon all-purpose flour
  14. Pinch of salt
  15. For the tiramisu layers:
  16. 2024 ladyfingers (store-bought or homemade)
  17. 1/2 cup brewed espresso (or strong coffee)
  18. 1/4 cup coffee liqueur (optional, like Kahlua)
  19. 2 tablespoons cocoa powder, for dusting
  20. Chocolate shavings, for garnish (optional)

Instructions

Prepare the crust: Preheat the oven to 325°F (163°C). Grease and line the bottom of a 9-inch springform pan. Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl, press into the pan, and bake for 8-10 minutes. Set aside to cool.

  1. Prepare the filling: Beat softened cream cheese with sugar until smooth, then add vanilla extract, espresso powder. Add eggs one at a time. In a separate bowl, beat mascarpone cheese and heavy cream, add flour and salt. Gradually add this mixture to the cream cheese and combine well.
  2. Assemble the cheesecake: Pour half of the filling over the cooled crust. Soak ladyfingers in espresso and coffee liqueur and place them on top of the filling. Pour the remaining filling over the ladyfingers. Bake for 55-65 minutes, until the edges are set and the center is slightly jiggly. Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  3. Prepare the finishing touches: Dust the chilled cheesecake with cocoa powder and optionally garnish with chocolate shavings.
  4. Serve: Remove the cheesecake from the springform pan, slice, and serve chilled.

Notes

  1. For a richer coffee flavor, add a splash of coffee liqueur to the filling.
  2. Ensure the cheesecake cools gradually to prevent cracks in the surface.
  3. Use regular espresso or instant coffee if you don’t have espresso powder.
