Ingredients

  • 12 eggs
  • 2 slices bacon or 1 sausage patty (or ham slice)
  • 12 slices cheese (cheddar, American, Swiss, etc.)
  • 1 English muffin, bagel, croissant, or 2 slices of bread
  • 1 tsp butter or cooking oil
  • Salt and black pepper, to taste
  • Optional toppings: avocado slices, tomato, spinach, hot sauce, caramelized onions

Instructions

  1. In a skillet over medium heat, sausage, or ham until browned and crispy. Set aside.
  2. In the same skillet, scramble, fry, or cook eggs omelet-style. Season with salt and pepper. For a round fit, cook in a greased mason jar lid or egg ring.
  3. Toast the bread, muffin, bagel, or croissant until golden. Spread lightly with butter if desired.
  4. Assemble the sandwich: place cheese on the bottom bread layer, then top with cooked eggs, meat, and any optional toppings.
  5. Close the sandwich, press gently, slice if desired, and serve immediately while hot.
