Ingredients

  • 1 lb ground chicken
  • 2 tablespoons olive oil or sesame oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, diced
  • 1 carrot, julienned
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar or honey
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, chopped
  • Butter lettuce or iceberg lettuce leaves for wrapping

Instructions

  • Heat oil in a large skillet over medium heat. Add the ground chicken and cook, breaking it apart until browned.
  • Add the onion, garlic, and ginger to the skillet and cook for 2-3 minutes until fragrant and the onion softens.
  • Add the red bell pepper and carrot, cooking for an additional 2-3 minutes until slightly tender.
  • Stir in soy sauce, fish sauce, lime juice, and brown sugar (or honey). Add red pepper flakes if you prefer more heat. Let the mixture cook for another 2-3 minutes.
  • Remove from heat and mix in fresh cilantro and green onions.
  • Spoon the chicken mixture into lettuce leaves, folding them like tacos, and serve immediately.
