Ingredients

4 boneless, skinless chicken breasts

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach, chopped

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh basil (optional, for garnish)

Instructions

  • Sear Chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, garlic powder, onion powder, basil, oregano, and red pepper flakes. Sear chicken for 2-3 minutes on each side until lightly golden brown. Transfer chicken to the slow cooker.

  • Prepare Sauce: In the same skillet, combine heavy cream and chicken broth, stirring to combine. Pour this mixture over the chicken in the slow cooker.

  • Add Vegetables: Add chopped sun-dried tomatoes and spinach to the slow cooker.

  • Cook: Cover and cook on low for 4-6 hours, or until the chicken is fully cooked and tender.

  • Add Parmesan: About 15 minutes before serving, stir in the grated Parmesan cheese and allow it to melt into the sauce.

  • Serve: Serve the Tuscan chicken with pasta, rice, or your favorite side. Garnish with fresh basil, if desired.

Notes

  • For Extra Flavor: Consider adding mushrooms with the sun-dried tomatoes and spinach for a heartier dish.

  • Substitute Chicken Thighs: For a richer flavor, you can substitute boneless, skinless chicken breasts with thighs.

  • Low-Carb Option: Serve with zucchini noodles or cauliflower rice for a low-carb variation.

  • Dairy-Free: Use coconut cream or another dairy-free cream alternative and skip the Parmesan.
