Teriyaki Chicken Skewers feature juicy, marinated chicken grilled to perfection and coated in a glossy, sweet-and-savory teriyaki glaze. Easy to make and bursting with flavor, they’re perfect for dinners, parties, or barbecues.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste
  • Wooden or metal skewers
  • Sesame seeds (optional, for garnish)
  • Chopped green onions (optional, for garnish)

For the Teriyaki Marinade/Sauce:

  • 1/2 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water (for slurry)
  • 1/4 cup water (for sauce base)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a saucepan over medium heat, combine soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, sesame oil, and 1/4 cup water. Bring to a simmer.
  3. In a small bowl, mix cornstarch with 2 tbsp water to make a slurry. Add to the sauce and simmer until thickened. Let cool.
  4. Season chicken pieces with salt and pepper. Pour half of the cooled teriyaki sauce over the chicken and marinate for at least 30 minutes, or up to 8 hours.
  5. Thread marinated chicken pieces onto skewers.
  6. Preheat grill or grill pan to medium-high heat and lightly oil the grates.
  7. Grill skewers for 3–4 minutes per side, basting with remaining teriyaki sauce, until chicken is cooked through and lightly charred.
  8. Remove from grill and garnish with sesame seeds and green onions, if desired. Serve hot.

Notes

  • Use chicken thighs for juicier results, or breasts for a leaner option.
  • Set aside some sauce before marinating if you’d like to use it for dipping.
  • Alternate chicken with vegetables or pineapple for variety.
  • Teriyaki sauce can be made ahead and stored in the fridge for up to a week.
  • For indoor cooking, use a grill pan or broiler for similar charred flavor.
