Tater Tot Chili Casserole

A comforting, crowd-pleasing casserole made with hearty homemade chili, melted cheese and a crispy golden tater tot topping — perfect for busy weeknights, potlucks or cozy family dinners.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 23 garlic cloves, minced
  • 500 g ground beef or turkey
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika (or smoked paprika)
  • Salt and pepper, to taste
  • 1 can kidney or black beans, drained and rinsed
  • 1 can (400 g) crushed or diced tomatoes
  • 1 cup tomato sauce or passata
  • 2 cups shredded cheddar or cheese blend
  • 1 bag frozen tater tots

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Heat olive oil in a large skillet and sauté onion and bell pepper until softened.
  3. Add garlic and cook briefly.
  4. Add ground beef or turkey; cook until browned and crumbled.
  5. Stir in chili powder, cumin, paprika, salt and pepper.
  6. Add beans, crushed tomatoes and tomato sauce; simmer 10–15 minutes to thicken.
  7. Transfer chili to a casserole dish.
  8. Top with an even layer of shredded cheese.
  9. Arrange frozen tater tots in a single layer over the cheese.
  10. Bake 25–35 minutes or until tots are crisp and golden.
  11. Serve hot with optional sour cream, green onions or jalapeños.

Notes

  • Add corn, zucchini or spinach for extra vegetables.
  • Chipotle peppers add great smoky heat.
  • Use plant-based mince for a vegetarian version.
  • Reheat in the oven to restore tater tot crispiness.
