A creamy and nutty tahini salad dressing made with sesame paste, fresh lemon juice, and simple seasonings, perfect for salads, grain bowls, and roasted vegetables.

Ingredients

  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 35 tablespoons water (as needed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium bowl, add the tahini and fresh lemon juice. Whisk until the mixture thickens slightly.
  2. Stir in minced garlic, salt, and black pepper.
  3. Slowly drizzle in the olive oil while whisking to create a smooth consistency.
  4. Gradually add water, one tablespoon at a time, whisking until the dressing reaches your desired thickness.
  5. Taste and adjust seasoning, adding more lemon juice for brightness or salt as needed.
  6. Serve immediately or refrigerate until ready to use. Stir well before serving.

Notes

  • The dressing may thicken after refrigeration; stir in a small amount of water to loosen before serving.
