Taco Bubble Up Bake is a cheesy, comforting casserole made with taco-seasoned meat, bubbly biscuit dough, and melty cheese—perfect for a fun twist on taco night and easy enough for busy weeknights.

Ingredients

  • 1 lb ground beef or ground turkey
  • 1 can (16 oz) refrigerated biscuit dough
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup salsa or 1 can (10 oz) diced tomatoes with green chilies
  • 1.5 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Optional toppings: chopped green onions, jalapeños, chopped tomatoes, shredded lettuce, avocado

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook ground beef until browned. Drain any excess grease.
  3. Stir in taco seasoning and salsa or diced tomatoes. Simmer for 3–5 minutes.
  4. Cut biscuit dough into quarters. Gently fold into the meat mixture until well combined.
  5. Pour the mixture into a greased 9×13-inch baking dish.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Bake for 25–30 minutes, or until biscuits are golden and cooked through.
  8. Let cool slightly, then top with sour cream and any optional toppings. Serve warm.

  • Use spicy salsa or add jalapeños for extra heat.
  • Swap ground beef for ground chicken or sausage for variety.
  • Add canned black beans, corn, or bell peppers for extra texture.
