Ingredients

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce or cabbage

1 avocado, sliced

½ cup salsa or pico de gallo

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

  • In a large bowl, toss the diced sweet potatoes with olive oil, cumin, chili powder, paprika, salt, and pepper until evenly coated.

  • Spread the sweet potatoes in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.

  • While the sweet potatoes are roasting, heat the tortillas in a dry skillet over medium heat until warm and slightly crispy, about 1-2 minutes per side.

  • Once the sweet potatoes are ready, assemble the tacos by placing a generous portion of roasted sweet potatoes on each tortilla.

  • Top with shredded lettuce or cabbage, avocado slices, salsa, and fresh cilantro.

  • Serve the tacos with lime wedges on the side for extra flavor.
