Sweet Potato Soup is a creamy, comforting, and naturally sweet soup featuring rich sweet potatoes combined with aromatic spices, perfect for a nutritious and satisfying meal.

Ingredients

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 3 cloves garlic, minced
  4. 4 cups peeled and diced sweet potatoes
  5. 4 cups vegetable or chicken broth
  6. 1 teaspoon ground cumin
  7. 1/2 teaspoon smoked paprika
  8. Salt and pepper to taste
  9. Optional toppings: Greek yogurt, chopped cilantro, toasted pumpkin seeds

Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until soft and fragrant, about 5 minutes.

  1. Stir in diced sweet potatoes, cumin, and smoked paprika. Cook for 2-3 minutes.
  2. Pour in broth, bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20-25 minutes.
