Sunflower Seed Chocolate Bites are bite-sized, no-bake snacks combining crunchy sunflower seeds with rich dark chocolate, offering a healthy and energizing treat perfect for on-the-go snacking.

Ingredients

  1. 1 cup sunflower seeds (raw or roasted, unsalted)
    1 cup dark chocolate chips or chopped dark chocolate
    1 tablespoon coconut oil
    1 teaspoon vanilla extract
    Pinch of sea salt (optional)

Instructions

Line a mini muffin tin or silicone molds with paper liners or lightly grease.

  1. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
  2. Stir in vanilla extract.
  3. Mix sunflower seeds into the melted chocolate until evenly coated.
  4. Spoon the mixture into the prepared molds, pressing down gently to compact.
  5. Sprinkle a pinch of sea salt on top if desired.
  6. Refrigerate for at least 20-30 minutes until set.
  7. Remove from molds and enjoy immediately or store in an airtight container.
