Stuffed Pizza Chicken is a flavorful, low-carb dish that combines the best of pizza and baked chicken. Juicy chicken breasts are filled with mozzarella and pepperoni, then topped with marinara and more cheese for a satisfying, family-friendly dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 16 pepperoni slices or turkey pepperoni
  • 1 cup marinara or pizza sauce
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish (optional)
  • Optional toppings: black olives, sautéed mushrooms, chopped bell peppers

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into the side of each chicken breast without cutting all the way through.
  3. Season both sides of the chicken with salt, pepper, garlic powder, and Italian seasoning.
  4. Stuff each breast with 4 slices of pepperoni and 1/4 cup mozzarella cheese. Secure with toothpicks if necessary.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown.
  6. Spoon marinara sauce over each chicken breast, then top with more mozzarella and a sprinkle of Parmesan.
  7. Transfer skillet to oven and bake for 20–25 minutes, until internal temperature reaches 165°F.
  8. Remove from oven and let rest for 5 minutes. Garnish with basil or parsley before serving.
