Stuffed Pepper Casserole is a comforting and easy-to-make baked dish that captures all the flavors of classic stuffed peppers without the fuss of hollowing out peppers. This casserole layers ground beef, rice, bell peppers, tomatoes, and cheese into a hearty, flavorful meal.

Ingredients

  1. 1 lb ground beef or turkey
    1 cup cooked rice (white, brown, or cauliflower rice)
    1 can (14.5 oz) diced tomatoes
    1 medium onion, diced
    2 cups chopped bell peppers (mixed colors)
    2 cloves garlic, minced
    1 cup shredded cheddar or mozzarella cheese
    1 teaspoon dried oregano
    1 teaspoon paprika
    Salt and pepper, to taste
    2 tablespoons olive oil

Instructions

Preheat oven to 375°F (190°C).

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent, about 3-4 minutes.
  2. Add ground beef, breaking it up, and cook until browned and cooked through. Drain excess fat if necessary.
  3. Stir in chopped bell peppers, diced tomatoes, cooked rice, oregano, paprika, salt, and pepper. Cook for another 5 minutes to combine flavors.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Sprinkle shredded cheese over the top.
  6. Bake uncovered for 20-25 minutes, until cheese is melted and bubbly.
  7. Let cool slightly before serving.
