Ingredients

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • ½ medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup cooked brown rice
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers cut-side up in a baking dish.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened. Add the ground turkey, breaking it apart with a spoon, and cook until browned. Stir in the Italian seasoning, salt, and pepper.
  3. Add the cooked brown rice and marinara sauce to the turkey mixture, stirring to combine.
  4. Spoon the turkey and rice mixture into each bell pepper, pressing down gently to pack the filling.
  5. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle the shredded mozzarella cheese on top of each stuffed pepper, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
