Ingredients

  • For the Strawberries:

    • 2 cups fresh strawberries, hulled and sliced
    • ¼ cup granulated sugar
  • For the Shortcakes:

    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 3 tablespoons granulated sugar
    • ½ cup unsalted butter, cold and cubed
    • ¾ cup heavy whipping cream
  • For the Whipped Cream:

    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  • Prepare the Strawberries:

    • In a bowl, toss sliced strawberries with sugar. Let sit for 30 minutes to release juices.
  • Make the Shortcakes:

    • Preheat oven to 425°F (220°C).
    • In a bowl, mix flour, baking powder, salt, and sugar.
    • Cut in butter until the mixture resembles coarse crumbs.
    • Add heavy cream and mix until just combined.
    • Turn dough onto a floured surface, pat into a ¾-inch thick round, and cut into circles using a biscuit cutter.
  • Bake:

    • Place shortcakes on a baking sheet and bake for 12-15 minutes, until golden brown.
    • Let cool slightly before assembling.
  • Prepare the Whipped Cream:

    • Beat heavy cream, powdered sugar, and vanilla until soft peaks form.
  • Assemble:

    • Slice shortcakes in half.
    • Spoon macerated strawberries over the bottom half.
    • Top with whipped cream and place the other half on top.
    • Add more strawberries and whipped cream if desired.
