This creamy and tropical Strawberry Pina Colada Pudding blends sweet strawberries, coconut, and pineapple, with a smooth pudding base for a refreshing dessert experience.

Ingredients

  1. 1 box (3.4 oz) instant vanilla pudding mix
  2. 1 ½ cups cold milk
  3. 1 cup heavy cream
  4. ½ cup coconut milk
  5. 1 cup fresh strawberries, chopped
  6. 1 cup crushed pineapple, drained
  7. 2 tablespoons shredded coconut (optional, for garnish)
  8. 1 tablespoon lime juice (optional, for added tang)
  9. 1 tablespoon rum extract (optional, for a pina colada flavor)

Instructions

In a large mixing bowl, combine the instant vanilla pudding mix and cold milk. Whisk together until the pudding begins to thicken (about 2 minutes).

  1. Add the heavy cream and coconut milk to the pudding mixture, whisking until smooth and creamy.
  2. If using rum extract and lime juice, add them and whisk to combine.
  3. Fold in the chopped strawberries and crushed pineapple, stirring until the fruit is evenly distributed.
  4. Pour the pudding into serving dishes and refrigerate for at least 2 hours to set.
  5. Before serving, garnish with shredded coconut for an extra tropical touch.
  6. Serve chilled and enjoy!

Notes

  1. For a richer flavor, consider adding coconut whipped cream on top.
  2. For an adult version, you can substitute rum extract with actual rum, adjusting to taste.
  3. If you prefer a non-dairy version, you can replace the coconut milk with almond milk or oat milk.
  4. Feel free to adjust sweetness with honey or sugar based on your preference.
