Strawberry Margarita Icebox Pie is a refreshing no-bake dessert that blends strawberries, lime, and optional tequila into a creamy filling over a graham cracker crust. It’s perfect for summer parties or a chilled treat anytime.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 2 cups fresh strawberries, hulled and chopped
  • 1 can (14 oz) sweetened condensed milk
  • 8 oz cream cheese, softened
  • 1/4 cup fresh lime juice
  • 1 tsp lime zest
  • 2 tbsp tequila (optional)
  • 1 tbsp triple sec or orange juice (optional)
  • 1 cup whipped cream or whipped topping
  • Fresh strawberries, for garnish
  • Lime slices or zest, for garnish
  • Coarse sea salt or sugar (optional, for garnish)

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into a pie dish and chill while preparing the filling.
  2. In a blender or food processor, blend strawberries, sweetened condensed milk, cream cheese, lime juice, lime zest, tequila, and triple sec until smooth.
  3. Fold in whipped cream or topping gently until combined.
  4. Pour the filling into the chilled crust and smooth the top.
  5. Refrigerate for at least 6 hours or overnight until set.
  6. Before serving, garnish with fresh strawberries, lime zest or slices, and optional salt or sugar around the edge.

Notes

  • Chill overnight for best texture and flavor.
  • Use a store-bought crust to save time.
  • Make it alcohol-free by omitting tequila and triple sec.
