Ingredients
4 cups fresh arugula
1 cup fresh strawberries, hulled and sliced
1/2 cup crumbled goat cheese
1/3 cup chopped nuts (such as pecans or almonds)
1/4 small red onion, thinly sliced (optional)
2 tbsp olive oil
1 tbsp balsamic vinegar or balsamic glaze
1 tsp honey or maple syrup (optional)
Salt, to taste
Black pepper, to taste
Instructions
Rinse and dry the arugula, then place it in a large salad bowl.
Hull and slice the strawberries, then add them to the bowl with the arugula.
Add thinly sliced red onion if using.
Crumble the goat cheese over the salad.
Sprinkle the chopped nuts on top for crunch.
In a small bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup (if using), salt, and black pepper.
Drizzle the dressing over the salad and gently toss to coat all ingredients evenly.
Serve immediately.
Notes
Add dressing just before serving to prevent sogginess.
Use fresh, ripe strawberries for best flavor.
