Strawberry Buttermilk Snack Cake is a soft, moist, one-layer cake made with fresh strawberries and tangy buttermilk. Perfect for snacking, it’s simple to prepare and lightly sweetened, with no frosting required.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup buttermilk
  • 1 cup fresh strawberries, chopped
  • Optional: powdered sugar for dusting or whipped cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add egg and vanilla extract; mix until well combined.
  5. Alternate adding the flour mixture and buttermilk to the wet mixture, beginning and ending with the flour. Mix until just combined.
  6. Gently fold in the chopped strawberries.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for 35–40 minutes, or until golden and a toothpick inserted in the center comes out clean.
  9. Let the cake cool completely before slicing. Dust with powdered sugar or top with whipped cream, if desired.

  • Use fresh strawberries for best texture and flavor.
  • Store at room temperature or refrigerate to keep longer.
  • Great served with coffee, tea, or a scoop of vanilla ice cream.
  • Can be made ahead and freezes well.
