Strawberry Basil Bruschetta is a refreshing twist on the classic Italian appetizer. The sweetness of ripe strawberries pairs perfectly with fresh basil, garlic, and a touch of balsamic glaze on crispy toasted bread. A vibrant and easy-to-make dish.

Ingredients

  1. 1 loaf of baguette or crusty bread, sliced into 1/2-inch thick pieces
1 cup strawberries, hulled and diced
    1/4 cup fresh basil, chopped
1 tbsp balsamic vinegar (or balsamic glaze)
1 tbsp honey (optional, for added sweetness)
1/2 tsp garlic powder (or 1 small garlic clove, minced)
1 tbsp olive oil (for drizzling)
    Salt and pepper, to taste
Fresh mozzarella or ricotta (optional, for topping)

Instructions

Preheat your oven to 375°F (190°C). Arrange the bread slices on a baking sheet in a single layer. Drizzle with olive oil and toast in the oven for 8-10 minutes, or until the bread is golden brown and crispy.

  1. In a bowl, combine the diced strawberries, chopped basil, honey (if using), balsamic vinegar (or glaze), and garlic powder. Season with salt and pepper to taste. Stir gently to combine.
  2. Once the bread is toasted, spoon the strawberry basil mixture generously onto each slice of toasted bread. Optionally, top with fresh mozzarella or ricotta for added creaminess.
  3. Serve immediately, drizzling with more balsamic glaze for extra flavor, if desired.

Notes

  • If you prefer, substitute ricotta or mozzarella with creamy goat cheese for a tangy flavor.
  • For a spicy twist, add red pepper flakes to the strawberry mixture.
  • Grilled peaches or nectarines can be substituted for strawberries for a summery variation.
  • For a vegan version, omit the cheese or use a dairy-free alternative.
  • Ensure the bread is properly toasted to retain its crunchiness.
