Steak and Cheese Sliders are mini baked sandwiches loaded with tender steak, melted provolone cheese, and optional sautéed peppers and onions, all on soft rolls brushed with a savory garlic butter glaze. Perfect for parties or game day.

Ingredients

  • 1 lb thinly sliced steak (ribeye, sirloin, or deli roast beef)
  • 12 slider rolls or Hawaiian rolls
  • 68 slices provolone cheese
  • 1 bell pepper, thinly sliced (optional)
  • 1 small onion, thinly sliced (optional)
  • 1 tbsp olive oil or butter (for sautéing)
  • 2 tbsp butter (for topping)
  • 1/2 tsp garlic powder
  • 1 tsp Worcestershire sauce (divided)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil or butter and sauté onions and bell peppers until soft (about 5–7 minutes). Set aside.
  3. Add steak to the skillet, season with salt, pepper, and 1/2 tsp Worcestershire sauce. Cook until warmed through and lightly browned.
  4. Slice slider rolls in half horizontally and place bottom half in a greased baking dish.
  5. Layer steak evenly over the bottom rolls.
  6. Add sautéed onions and peppers on top (if using).
  7. Place provolone cheese slices over the steak and vegetables.
  8. Top with the upper half of the rolls.
  9. Melt butter and mix with garlic powder and remaining Worcestershire sauce. Brush over tops of rolls.
  10. Cover with foil and bake for 15 minutes. Uncover and bake an additional 5 minutes until golden and cheese is melted.
  11. Cut into individual sliders and serve warm.

Notes

  • Use deli roast beef as a shortcut for cooked steak.
  • Customize with your favorite cheese or toppings like mushrooms or jalapeños.
  • Best served warm, but leftovers reheat well in the oven.
  • Prep ahead and bake just before serving for convenience.
  • Don’t overload with wet ingredients to prevent soggy rolls.
