Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • Green food coloring (optional)
  • Sprinkles or decorating sugar for topping

For the Icing (Optional):

  • 1 ½ cups powdered sugar
  • 23 tbsp milk
  • 1 tsp vanilla extract
  • Green food coloring

Instructions

  • Preheat the Oven – Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream Butter and Sugar – In a large mixing bowl, beat butter and sugar until light and fluffy.
  • Add Wet Ingredients – Mix in the egg, vanilla extract, and almond extract (if using).
  • Combine Dry Ingredients – In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until a dough forms.
  • Add Color – If using food coloring, mix it into the dough until evenly distributed.
  • Shape the Cookies – Roll dough into small balls or use a shamrock-shaped cookie cutter. Place them on the prepared baking sheet.
  • Bake – Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on a wire rack.
  • Decorate – If using icing, mix powdered sugar, milk, vanilla, and food coloring until smooth. Drizzle or spread over cooled cookies, and add sprinkles before the icing sets.
  • Serve and Enjoy

Notes

  • For extra softness, slightly underbake the cookies.
  • Chill the dough for 15-20 minutes if using cookie cutters to help keep the shape.
  • Use gel food coloring for a vibrant green without adding too much liquid.
  • Store decorated cookies carefully by layering them with parchment paper in an airtight container.
