The Spinach Tuna Melt is a warm, satisfying sandwich that combines creamy tuna salad, melty cheese, and sautéed spinach between slices of golden, buttery bread. A wholesome twist on the classic melt, perfect for lunch or a quick dinner.

Ingredients

  1. 1 can (5 oz) tuna, drained
  2. 2 tbsp mayonnaise
  3. 1 tsp Dijon mustard (optional)
  4. Salt and black pepper, to taste
  5. 1 cup fresh baby spinach
  6. 4 slices bread (sourdough, rye, or whole grain)
  7. 4 slices cheese (cheddar, Swiss, provolone, or mozzarella)
  8. 2 tbsp unsalted butter, softened
  9. Optional: red onion slices, tomato slices, garlic powder

Instructions

In a bowl, mix drained tuna with mayonnaise, mustard (if using), salt, and pepper.

  1. Lightly sauté spinach in a skillet over medium heat for 1–2 minutes until just wilted. Drain excess moisture.
  2. Butter one side of each bread slice.
  3. On the unbuttered side, layer 1 slice of cheese, sautéed spinach, a scoop of tuna mixture, and an optional second slice of cheese.
  4. Top with another slice of bread, buttered side out.
  5. Heat a skillet over medium heat and grill the sandwich for 3–4 minutes per side until golden brown and cheese is melted.
  6. Remove from heat, let rest briefly, slice, and serve warm.

Notes

  • Drain tuna and spinach well to prevent sogginess.
  • Add avocado, tomato, or onion for extra flavor and texture.
  • Use your favorite melting cheese for best results.
  • Panini presses work great for an evenly crisped sandwich.
