Spinach and Cheese Squares are savory, bite-sized snacks made with spinach, cheese, and a fluffy egg batter. They’re perfect for parties, meal prep, or a quick meatless meal.

Ingredients

  1. 1 (10 oz) package frozen chopped spinach, thawed and well-drained
  2. 4 large eggs
  3. 1 cup all-purpose flour
  4. 1 teaspoon baking powder
  5. 1/2 cup milk
  6. 1 small onion, finely chopped
  7. 1 cup shredded cheddar cheese
  8. 1/2 cup grated Parmesan cheese
  9. 1/4 cup olive oil or melted butter
  10. 1/2 teaspoon salt
  11. 1/4 teaspoon black pepper

Instructions

Preheat your oven to 350°F (175°C).

  1. Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, beat the eggs, then stir in the milk and olive oil or melted butter.
  3. Add the flour and baking powder, mixing until just combined.
  4. Stir in the chopped onion, drained spinach, cheddar cheese, Parmesan cheese, salt, and pepper.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool slightly before cutting into squares and serving.

Notes

  1. Make sure the spinach is well-drained to avoid soggy squares.
  2. These can be served warm, at room temperature, or cold.
  3. Perfect for freezing—just reheat in the oven for best results.
  4. Use pre-shredded cheese to save time, but freshly shredded melts better.
