Spinach and Brie Dip is a warm, creamy appetizer featuring tender spinach and rich, melty Brie cheese. Baked until bubbly and golden, this elegant dip is perfect for entertaining or cozy gatherings.

Ingredients

  • 8 ounces Brie cheese, rind trimmed and cut into cubes
  • 2 cups fresh spinach, chopped
  • 4 ounces cream cheese, softened
  • 2 garlic cloves, minced
  • 1 small shallot, finely diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a small baking dish.
  2. Heat olive oil in a skillet over medium heat. Add shallot and cook for 2–3 minutes until softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in chopped spinach and cook until wilted and moisture has evaporated. Remove from heat and cool slightly.
  5. In a bowl, combine cubed Brie, softened cream cheese, and spinach mixture. Season with salt, black pepper, and red pepper flakes if using.
  6. Transfer mixture to prepared baking dish and sprinkle grated Parmesan on top.
  7. Bake for 20–25 minutes until bubbly and lightly golden.
  8. Let cool slightly before serving.

Notes

  • Thaw and thoroughly drain frozen spinach if substituting.
  • Remove most of the Brie rind for a smoother texture.
  • Add chopped artichoke hearts for a variation.
  • Store leftovers refrigerated for up to 3 days and reheat at 350°F until warmed through.
  • A 1-quart baking dish works well for this recipe.
