Spicy Sausage and Peppers is a flavorful one-pan meal combining Italian sausage, bell peppers, and onions simmered in a zesty tomato sauce. Perfect for a weeknight dinner or casual entertaining, it’s easy to make and bursting with bold, hearty flavor.

Ingredients

  • 1 lb spicy Italian sausage (links or bulk)
  • 3 bell peppers (red, green, or yellow), sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 1 can (14–15 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. If using sausage links, brown them whole until cooked through, then slice into rounds. If using bulk sausage, break it up and cook until browned. Remove sausage from skillet and set aside.
  3. Add more oil if needed and sauté sliced onions and bell peppers for 7–8 minutes until softened and slightly caramelized.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Stir in tomato paste and cook for 2 minutes.
  6. Add crushed tomatoes, oregano, crushed red pepper flakes (if using), salt, and black pepper. Stir well to combine.
  7. Return sausage to the skillet and simmer for 10–15 minutes until the sauce thickens and flavors meld.
  8. Taste and adjust seasoning as needed. Garnish with fresh basil or parsley if desired, and serve.

  • Use sweet Italian sausage for a milder version.
  • Add a splash of red wine after sautéing vegetables for richer flavor.
  • Great served over pasta, rice, polenta, or in sandwich rolls.
