Ingredients

  • 2 cups cooked jasmine or basmati rice
  • 1 ripe mango, peeled and diced
  • 1 avocado, sliced or cubed
  • 1/2 cucumber, thinly sliced
  • 1 red bell pepper, chopped
  • 1 cup red cabbage, shredded
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro or mint, chopped
  • Lime wedges, for serving
  • 2 tbsp olive oil or sesame oil
  • 2 tbsp lime juice
  • 1 tbsp soy sauce or tamari
  • 1 tsp honey or maple syrup
  • 1/2 tsp chili flakes or 1 tsp sriracha
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • Salt and pepper to taste
  • Optional protein: 8 oz grilled shrimp, tofu, or chicken

Instructions

  1. Cook the jasmine or basmati rice according to package instructions. Fluff and let cool slightly.
  2. In a small bowl, whisk together olive oil, lime juice, soy sauce, honey, chili flakes, garlic, ginger, salt, and pepper to make the spicy dressing.
  3. Divide the rice evenly among four serving bowls.
  4. Top each bowl with diced mango, avocado, cucumber, red bell pepper, and shredded red cabbage.
  5. Add your choice of grilled shrimp, tofu, or chicken if using.
  6. Drizzle the spicy dressing over each bowl.
  7. Garnish with chopped green onions, cilantro or mint, and lime wedges.
  8. Serve immediately and enjoy warm or chilled.
