Ingredients

  • 2 boneless skinless chicken breasts, halved to make 4 portions
  • 1 cup buttermilk
  • 2 tbsp hot sauce
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups vegetable oil for frying
  • 4 sandwich buns
  • 16 pickle slices
  • 1/4 cup mayonnaise

Instructions

  1. Pound the chicken breasts to an even thickness for even cooking.
  2. In a bowl, combine buttermilk and hot sauce. Add the chicken and marinate for at least 30 minutes.
  3. In another bowl, mix flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
  4. Remove the chicken from the marinade and coat it thoroughly in the flour mixture.
  5. Heat vegetable oil in a deep skillet or pot to about 350°F (175°C).
  6. Fry the chicken for 5–7 minutes per side until golden brown and cooked through.
  7. Transfer the fried chicken to a wire rack or paper towels to drain excess oil.
  8. Lightly toast the sandwich buns.
  9. Spread mayonnaise on the buns and place the fried chicken on the bottom half.
  10. Add pickle slices, close the sandwich with the top bun, and serve immediately.
