2 large boneless, skinless chicken breasts or thighs, cut into cubes
2 large sweet potatoes, peeled and diced
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to heat preference)
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground cumin
Salt and black pepper to taste
Fresh parsley or cilantro, chopped (for garnish)
Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, and half of the spice mix (paprika, cayenne, garlic powder, onion powder, cumin).
Arrange on Baking Sheet: Spread the seasoned sweet potatoes on one side of the baking sheet.
Prepare the Chicken: In the same bowl, toss the cubed chicken with the remaining olive oil and spice mix.
Place on Baking Sheet: Arrange the chicken on the other side of the baking sheet, keeping it separate from the sweet potatoes.
Bake: Roast in the preheated oven for 25–30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly crispy, and the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).
Serve: Garnish with chopped parsley or cilantro before serving.
