Spicy Beef Stew is a hearty, flavorful dish filled with tender beef, vegetables, and bold spices. This warming comfort meal has just the right amount of heat, making it perfect for chilly nights or when you crave something rich and satisfying.

Ingredients

  • 2 lbs beef chuck or stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 medium potatoes, diced
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes or tomato sauce
  • 4 cups beef broth
  • 12 teaspoons red chili flakes or 1 fresh chili pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides, then remove and set aside.
  2. In the same pot, add onions and cook until translucent. Stir in garlic and cook for another minute until fragrant.
  3. Add tomato paste, chili flakes, smoked paprika, and cumin. Stir for about a minute to release the flavors.
  4. Return browned beef to the pot and stir to coat with the spice mixture.
  5. Pour in crushed tomatoes and beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1½ to 2 hours, until beef is tender.
  6. Add carrots and potatoes, then simmer for an additional 30 minutes until vegetables are soft and the stew thickens.
  7. Taste and adjust seasoning with salt, pepper, or more chili to your liking.
  8. Garnish with freshly chopped parsley before serving.

Notes

  • Adjust chili flakes to control the spice level.
  • For a smoky flavor, add chipotle peppers or smoked paprika.
  • Let the stew sit overnight for even deeper flavor.
  • Thicken by simmering uncovered for 15 minutes or using a cornstarch slurry.
  • This stew freezes well for up to 3 months.
